Job Description

The Indian River Golf Club has an opportunity for a hard-working dedicated individual to lead their culinary team. The Lead Cook ensures that the club provides unique, nutritious, flavorful, and appealing food properly prepared. The Lead Cook will be responsible for menu planning, assisting with special events planning, and managing the kitchen crew. Event execution is also a vital part of the posiiton.*Essential Functions*· Plans meals, develops menus, and advises on pricing.· Establishes quality standards, including portion sizes, and trains kitchen personnel in food handling and preparation, including special health-conscious or religious dietary requirements; is responsible for controlling waste.· Helps in hiring kitchen staff.· Trains kitchen staff in proper operating procedures of all equipment, utensils, and machinery.· Provides training in safety, lifting and carrying, hazardous material handling, and first aid.· Trains kitchen personnel in sanitation controls and sets schedules for equipment cleaning, stock rotation, and other such measures.· Ensures compliance with health department requirements and regulations.· Requisitions food and supplies and controls kitchen inventories.Works closing with the front of the house manager to ensure outstanding customer experience.*Qualifications/Expertise*Familiarity with restaurant or club kitchen management and procedures is necessary, as is knowledge of elementary cost accounting procedures. Skillful meal planning and menu composition. Must be accustomed to exercising supervisory responsibilities under pressure.
