Job Summary Responsible for preparation of foods for patients and visitors by utilizing production standards, portion control and standardized recipes. Minimum Qualifications Education/Experience High School Diploma or equivalent required One year of food preparation experience preferred License/Certification/Registration N/A Knowledge, Skills & Abilities Ability to comprehend and follow the policies and procedures for MedStar Southern Maryland Hospital Center. Ability to read, write, and speak or communicate in English to successfully accomplish the essential duties of the position. Knowledge of a variety of foods, their preparation, and serving. Knowledge of sanitary methods to be used in food preparation. Knowledge of safety precautions and procedures in cooking food. Primary Duties and Responsibilities Prepare and cook meals for regular and modified diets and cafeteria/catering meal services. Serve in cafeteria food line. Serve regular and modified diet trays with a high degree of accuracy at patient meal service times. Maintains work area and equipment and supplies in a clean, sanitized, and organized manner. Ensures all kitchen production is completed in a timely manner. Review menus to determine type and quantities of meals to be prepared. Plans cooking schedule in conjunction with other cooks to ensure that food will be ready at specified times. Confers with the clinical dietician regarding modified diet preparation. Pre-prep and store food for daily menu production. Utilizes standardized recipes and production sheets at all times to ensure product consistency. Maintain high sanitation standards throughout the area of responsibility, which will meet or exceed Federal, State, and Local standards. Maintain organized and clean storage areas. Clean equipment, to include but not limited to: ovens, stoves, blenders, slicer, mixer, deep fryer, etc. prior to end of shift. Ensure that all food items are properly handled, and stored at the conclusion of the shift. Properly rotate inventory. Maintain control over food security through regular inventories, proper portioning and correct lock up procedures and production methods. Stock cafeteria food line to ensure no interruption in service. Participate in special events as needed. Check food temperatures to ensure standards are met. Performs other duties as assigned.
