Smoke Master FULL-TIME $18.50/hr, plus $600 new hire bonus, see details below The Smoke Master''s duties include: - Operating and cleaning smokehouses according to set guidelines.- Learning to monitor, record, and, communicate product progression through the smoking process.- Following all company GMPs and HACCP standards set by Ocean Beauty Seafoods.- Maintaining a clean and sanitary work area to meet USDC standards, and properly caring for equipment.Maintains an accurate and up-to-date list of products produced daily.- Acquiring the knowledge to prepare fish for smoking, using brining, washing, rinsing, and drying techniques according to product specifications.- Learning how to prepare ingredients and mixing of spices, salts, and sugars, for each flavor recipe produced.- Understanding the art of smoking fish, taste, appearance, and moisture content that is expected.-Following all company safety policies and procedures.Responds to change productively and handling other duties as required.
