To coach, guide and lead Team Members to foster personal and professional growth.ESSENTIAL DUTIES / RESPONSIBILITIESResponsible for quality, quantity, and timeliness of food municate with Sous Chefs and Chef de Cuisine regarding issues, as they arise.Ensure a quality-plated food presentation, portioning according to recipe standards, proper garnishes, and substitution procedures are followed consistently.Implement all F&B Procedures for food storage, rotation, spoilage, sanitation, and prevention of cross-contamination.Responsible for following recipes, times, and temperatures in order to produce high quality and consistent products.Responsible for conforming to all Indian Health Services standards.Provide guests professional images, attitudes, and educational Sushi entertainment.Responsible for teamwork, guest service, food quality, coaching, training, and food safety.Responsible for managing the Sushi Bar and main 12 Moons kitchen, including Robata Grill food quality, Guest Service, teamwork, and food safety.Responsible for providing and producing the highest quality preparation of all 12 Moons menu items in a timely, efficient, and a very consistent manner.Provide guests professional appearance and manner, proper entertainment and culture food knowledge.Maintain a favorable working relationship with fellow Team Members, and fosters and promotes a cooperative and harmonious work environment.Other duties and responsibilities as assigned.Requirements:Education and Experience:High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).Two (2) years of A'' la Carte SushiSkills and AbilitiesProven knowledge of proper Food Handling Procedures.Proven strong organizational and communication skills.Proven computer experience and knowledge (Excel, Word, and email).PREFERREDEducation and Experience:Culinary Degree or ACF CertificationTwo (2) years of culinary experience in the areas of Sushi and Asian CuisineProven working knowledge of East Asian Kitchen design and the operation of Robata grill, roast-and-hold ovens, conventional ovens, wok, noodle stations, fryers, ect. required.Snoqualmie Casino Career Development Track Series completion.Snoqualmie Casino exercises Snoqualmie Tribal Member/Native American preference in hiring, in compliance with the Snoqualmie Tribal Employment Rights Ordinance (TERO). You must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission. Pre-employment drug testing is required for all positions. The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I). DOT panel testing is required for the Driver position.
