Job Title: Sushi Sous Chef Location: Coco's Job Type: Full-Time  Reports To: Executive Sushi Chef / Executive Chef Position Summary: We are seeking a highly skilled and detail-oriented Sushi Sous Chef to join our rapidly growing culinary team. The ideal candidate will have a strong understanding of modern sushi preparation techniques, with a focus on speed, consistency, and presentation. Key Responsibilities: Collaborate with the kitchen team to ensure smooth service and timely execution of orders Ensure proper handling and storage of ingredients, with attention to freshness and inventory rotation (FIFO) Follow standard recipes and plating guidelines to maintain consistency and portion control Maintain a clean, safe, and hygienic working environment, complying with all food safety standards Assist in receiving and inspecting fish and produce deliveries, reporting quality issues to the Executive Sushi Chef Contribute to daily prep work, including slicing vegetables, seasoning rice, and portioning proteins Support quality control and communicate proactively about any product shortages or operational issues Requirements:      Deep knowledge of Japanese cuisine, fish handling, knife skills, and traditional sushi techniques      Experience working in a fast-paced, high-end or omakase-style sushi environment      Strong leadership and communication skills to support and guide the sushi team      Ability to maintain consistency, quality, and presentation standards under pressure      Food safety certification and strong understanding of hygiene and sanitation procedures      Passion for Japanese culinary culture, seasonality, and ingredient sourcing          Familiarity with aging, curing, and fermentation techniques (e.g., shime saba, kobujime, etc.)      Ability to train junior staff and contribute to menu development      Basic English and/or Japanese communication skills depending on team dynamics Physical Requirements: Ability to stand for extended periods and perform repetitive tasks Comfortable working in cold environments and handling raw seafood Must be able to lift up to 50lbs as needed "Coco's at Colette, LLC" and "Yugin" are equal opportunity employers.
