Restaurant and Job Overview: We're inviting people who are passionate about food and food service to join us in launching a new restaurant venture, Cerveau. Building on 12-years' experience leading Pizza Brain, the world's first pizza museum and restaurant (and Philly go to destination), Culinary Director Joe Hunter and his team are spearheading a new, Philly cicchetti experience featuring Mediterranean-inspired dishes and classic pizza. Located in Spring Arts on Spring Garden in a "loungy," "arts-forward" space, we’ll create Cerveau to be a new third place to vibe with friends, family, neighbors and colleagues. For Pizza Maker, we’re looking for experienced pizzaioli knowledgeable about the science and skilled in the art of making pizzas. To be a stand-out candidate, you’ll have additional experience from prep to dough mixing and kneading to oven management. You’ll also take pride in making our award-winning pies to recipe, each one reflective of your amazing abilities and attention to detail. ? Responsibilities Learn all pie recipes + specials. Make all pies to Chef’s recipe. Daily set-up and maintain a clean and orderly station throughout service. Ensure pizza line is freshly stocked. Master all elements of pizza-making: prep, dough + sauce making, dough rolling + stretching, topping, dropping and oven management. Accurately track and route all dine-in and delivery/pickup pizza orders. Date-label all prepped items + maintain food safety of all storage areas. Maintain orderly storage areas to facilitate inventory counts. Clean equipment and service items as required and/or requested by Management. Complete all daily checklists + accurately maintain all food logs. Mentor new staff and apprentices. ? Qualifications Min 2 years' previous pizza-making experience in a busy restaurant environment. Prior thin-crust pizza-making experience (preferred). Strong BOH skills, including prep and knife handling. Strong communication and multitasking skills. Familiarity with Mediterranean cuisine, wine, and cocktails is a plus. Comfortable working in a fast-paced, guest-focused environment. Toast POS experience a bonus. ?
