What You'll Do Job Description: Dishwasher The Dishwasher is responsible for the below duties as well as maintaining a professional, positive working environment for all employees. Kitchen Setup and Maintenance Set up dish station daily and test soap and sanitation levels using testing strips Put away all dishes and equipment from previous shift Maintain cleanliness standards throughout the kitchen and dish areas Sweep prep kitchen and line areas regularly Inventory and Storage Management Receive and properly store requisitions from Fairfax (pasta, dessert, wine) and Catering (cheese, pomodoro, meatballs) Organize walk-in cooler using First In, First Out (FIFO) protocol Rotate products and consolidate containers to maximize efficiency Process all deliveries by removing items from delivery containers and placing in appropriate storage with proper labeling and dating Handle farmers market deliveries with special attention to freshness and proper storage Waste Management and Organization Empty garbage and recycling throughout shift for line and prep kitchen Break down cardboard boxes and stack market crates Maintain clean and organized work areas at all times Exterior Maintenance Sweep parking lot weekly to remove debris and maintain professional appearance Pressure wash parking lot weekly to ensure cleanliness and safety Food Preparation Support Replenish mise en place on the line to support kitchen operations Complete daily prep tasks including peeling garlic, picking parsley, and cleaning lettuce (quantities based on daily needs) Taste and quality-check all prep items brought to station Understand produce freshness standards, texture, and flavor guidelines as established by Chef Communication and Teamwork Communicate with chef on duty regarding break times and shift completion Alert chef when station supplies are running low (soap, towels, sanitizer, garbage bags, etc.) Maintain positive, professional attitude and work collaboratively with all team members Ask for and offer assistance as needed in our teaching kitchen environment Work Environment and Standards Performance Expectations Work with urgency and efficiency in a fast-paced environment Maintain professional behavior at all times, especially in the open kitchen setting Present professional appearance with attention to hygiene and cleanliness Understand that all team members are "on stage" and contribute to the restaurant's image Food Safety and Quality Follow all health department regulations regarding food safety Adhere to temperature, chemical, and physical safety measures Maintain organized station according to established systems Understand the importance of producing beautiful, consistent, delicious food Check produce for freshness, texture, and flavor according to Chef guidelines Qualifications : To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.
