OPEN CALL: We are HIRING at Molino Olōyō in Dallas, Texas Opening Spring 2026 | Old East Dallas | 4422 Gaston Ave. Dallas, TX 75246 Molino Olōyō is an intimate, chef-driven restaurant by James Beard Semifinalist, Olivia Lopez that celebrates the soul of Mexican cuisine through heirloom corn and seasonally sourced ingredients. At its heart is a reverence for masa - transformed daily from native mexican heirloom corn and the techniques that elevate it by honoring both tradition and terroir.  The beverage program features curated wines, mezcals, and cocktails that reflect the same respect for regional identity and balance as the cuisine. Molino Olōyō is an immersive journey of storytelling woven into every interaction that connects guests to Mexico's culinary heritage: honoring the land, ingredients, and cultural traditions behind each dish, refined for a modern palate.
