Brooklyn meets Beirut.Job Summary Sawa Restaurant is seeking a detail-oriented and reliable AM Prep Cook to support daily kitchen operations through accurate food preparation, organization, and adherence to quality and sanitation standards. This position plays a key role in ensuring kitchen readiness and consistency in food execution. Essential Duties and Responsibilities Food Preparation Prepare ingredients accurately, including washing, cutting, chopping, slicing, and fabricating proteins (e.g., chicken, fish) in accordance with established recipes and kitchen standards. Marinate and portion ingredients to ensure efficiency and consistency during service. Cooking & Production Follow recipes and chef instructions to prepare assigned food items. Prepare and cook staff/family meals as directed. Communication & Teamwork Communicate clearly and professionally with the prep team, line cooks, and chefs to ensure tasks are completed to established standards. Collaborate with kitchen staff to ensure smooth transitions between prep and service periods. Inventory & Stock Support Assist with receiving deliveries and verifying product quality. Help maintain appropriate inventory levels of ingredients and supplies and promptly notify chefs of shortages or quality concerns. Equipment & Safety Safely operate and properly maintain kitchen equipment, including knives, slicers, and food processors. Report equipment malfunctions or safety concerns promptly to management. Sanitation & Organization Maintain a clean, organized, and sanitary work area in compliance with health and safety regulations. Adhere to all food safety, hygiene, and sanitation standards. Menu Knowledge & Adaptability Develop familiarity with the menu, recipes, and preparation methods. Perform additional kitchen-related duties as assigned to support overall operations. Physical Requirements Ability to see, hear, and communicate effectively. Ability to stand and walk for extended periods (up to 8 hours per shift). Frequent bending, reaching, and movement throughout the workday. Ability to frequently lift up to 25 pounds and occasionally lift up to 50 pounds. These physical requirements may be performed with or without reasonable accommodation. Qualifications and Requirements Previous experience as a Prep Cook or similar kitchen role; supervisory experience is a plus but not required. Proficient knife skills, including protein fabrication. Working knowledge of basic cooking techniques (e.g., sauces, stews, braising). Familiarity with Lebanese cuisine and traditional preparation techniques is preferred. Ability to work efficiently in a fast-paced environment while maintaining attention to detail. Strong organizational skills and a commitment to quality. Knowledge of and commitment to food safety and sanitation practices. Availability to work flexible schedules, including weekends and holidays.
