The JobTortello is looking for a sous chef to take a leadership role in our highly awarded Italian restaurant. From our bustling restaurant with new specials every week to our private event kitchen upstairs to leading pasta classes, this role provides plenty of opportunity to stretch and learn. With an open kitchen and our pasta classes, we are looking for someone with not only high craft and reliability but also someone gregarious and warm who brings a great energy to our space. Michelin Bib Gourmand 2022, 2023, 2024 Gambero Rosso 2022, 2023, 2024 Jean Banchet 2019 nominee for Best Counter Service Chicago Magazine, Best New Restaurants, April 2020 As Sous Chef, you will : Uphold excellent, consistent food quality Contribute to weekly specials and holiday initiatives Nimble to be able to step into various roles - expo, line, private event kitchen, pasta classes Assist in management of daily operations when head chef is off Manage BOH supplies, including food vendors, kitchen supplies Assist in the training, development, and motivation of culinary staff within a positive work environment Ensure standards for kitchen follows all Health Department Guidelines to ensure proper food handling Oversee daily par levels of all prep for line and pasta making Ensure opening and closing checklists are being followed Assist head chef in managing food cost, labor cost, and inventory Hands on contributions to regular service Requirements A flexible schedule with the ability to work day, evening and weekend hours as business needs require Thorough knowledge of the practices and procedures of the food and beverage, hospitality business 2+ years of culinary management experience Fresh pasta experience is a plus Comfortable interacting with customers Ability to lift 50lb+ We are an Equal Opportunity Employer More detail about Tortello, please visit
