A'BriTin is seeking an energetic and skilled Sous Chef to partner closely with the Executive Head Chef in leading kitchen operations and delivering high-quality food for events ranging from intimate gatherings to large-scale productions of 25-500+ guests. This role is central to both hands-on food production and operational leadership, balancing in-house preparation, staff development, and on-site event execution. The position is structured around the seasonal nature of the business: winter and spring focus on training, systems refinement, and standardization, while summer and fall emphasize high-volume production, logistics coordination, and flawless event delivery-particularly during peak wedding season (August-October). The Sous Chef serves as a key leader in maintaining quality, consistency, food safety, and team performance across all phases of operation. Essential Functions Assist the COO and Executive Chef in daily kitchen management including but not limited to training, ordering, inventory management, people management, budgeting, scheduling, cooking, and menu development. Lead and execute food production for off-site catered events. Able to transport, set up and break down kitchen equipment, stations and service areas at event locations. Ensure food quality, temperature, and presentation and maintained during events. Able to interrupt and review BEOs, timelines and menus in advance. Knowledge of cost control, inventory and waste management. Oversee batch cooking and large-scale food preparation and plating both onsite and offsite. Supervise line cooks, prep cooks, kitchen assistants, dishwashers, and warehouse staff. Learn and train new staff on recipes, techniques and standards. Assist with menu development and specials. Ensure proper cooking, sanitation, presentation and company standards. Monitor and order all kitchen inventory. Understand and implement waste minimization protocols. Assist with vendor relations and receiving deliveries. Ensure kitchen equipment is used properly and report maintenance issues. Communicate and coordinate efficiently with FOH to ensure smooth service. Drive company vans and trailers to and from events, ranging from close to long distances within MN. Able to use computers, tablets, and miscellaneous electronic material including experience with using Microsoft Office and Excel. Qualifications (Required): 3-5 years professional kitchen experience, with at least 1-2 years in a supervisory or lead role Demonstrated experience in catering, banquet, or high-volume food production Proven ability to manage large-scale prep and execution for events (100+ guests) Experience leading and training kitchen staff Strong working knowledge of food safety, sanitation and temperature control in off-site settings Ability to read and execute BEOs, productions schedules and event timelines Comfortable serving as lead on-site chef during events Able to drive a passenger van and/or pickup trucks with trailers attached Able to attach trailers to hitches Ability to lift and stand for extended periods of time Valid driver's license Able to pass a basic background check Qualifications (Preferred): Culinary degree or formal training Training with ethnic and alternative cuisines Experience with weddings and other high-end private events Familiarity with mobile kitchens, hot boxes, chafers and rental equipment Read and write in multiple languages, Spanish emphasis Able to use and navigate CRM programs such as Caterease or TripleSeat Additional Notes: Prolonged periods of sitting at a desk and working on a computer Prolonged periods of standing and walking Prolonged periods of standing, walking, working in weather elements, sometimes unsheltered Able to lift 50+ pounds. Compensation: DOQ - $55,000 - $65,000 annually. Bonus opportunities. Department: Catering & Events - Operations Job Status: Exempt - Full Time Schedule: This is a full-time position with a schedule determined by business needs and event requirements. Hours may include a combination of standard business hours, evenings, weekends, and extended shifts. While some work may occur during typical daytime hours, flexibility is required, as scheduling depends entirely on operational demands and event schedules. Evening and weekend work should be expected during the summer and fall months due to peak event and wedding season. This is non-negotiable.
