JOB SUMMARY: The Puesto Manager - Prepared Foods has responsibility for total Puesto performance, including the P&L for their assigned Puesto and all related product categories through building and maximizing an optimized strategy and plan for menu, price, promotion & seasonal rotations, quality, production, total customer experience, sourcing strategies and the tactics to achieve them. Works in partnership with Department Leader, Field Team, R&D, Commissary and Operations to develop, communicate, train and implement successful strategies that meet the company objectives of fresh, authentic and on-trend Mexican Foods. Drives effective programs and offerings that deliver and maximize defined Meal Occasions. ESSENTIAL DUTIES AND RESPONSIBILITIES: Maintain and grow our image as the premier Mexican provider of authentic goods and flavors. Create menu offerings and programs that will deliver quality, service and customer satisfaction; Maintain our competitive edge through continuous improvement of products, processes, customer experience, ingredients, suppliers, training and associate development. Develop and execute effective offerings that capture and maximize defined meal occasions across all targeted customer segments. Deliver a menu that delivers on our goal of differentiation through Mexican authenticity and cultural relevance while also staying true to current customer trends and eating habits. Analyzes category and menu performance across a variety of indicators - sales, gross profit, shrink, contribution and profitability and develop annual and seasonal category and Puesto plans based on a thorough understanding of the menu, consumer, and the marketplace. Develops and executes strategic plans to support category and menu sales and margin goals. Manages menu assortment to maximize freshness, appeal, quality and customer experience to meet consumer meal occasion needs both annually and seasonally. Ensures margin targets are met while preserving our pricing position and strategies. Partners with Procurement, R&D and Commissary to ensure best quality products and sourcing is achieved to satisfy the menu quality, volume and availability. Monitors raw materials and other product costs to ensure best quality ingredients, vendor pricing and ability to manage retail prices effectively. Perform frequent and regular store visits to monitor execution and adjust strategies. Partner with Operations to review and constantly strive for improved processes that emphasize the end to end customer experience including: 5S cleanliness and sanitation, workplace organization and efficient process/standards, labor efficiency, associate safety, delivery of exceptional customer hospitality, consistency of product quality, provision and utilization of appropriate equipment, and attractiveness and quality of end product packaging and presentation until consumption. Work with Operations and Field Trainers to set clear expectations and direction regarding business processes, service standards, and labor requirements to achieve optimal in-store execution of authentic goods and programs. Directs and partners with the Replenishment Team to ensure product availability, consistency of supply and service level objectives and applies cost-of-goods insights to drive increased efficiency. Owns final menu development in partnership with Food Development Committee and R&D including new products, rotational seasonal offerings and associated quality. Works with Marketing and Operations to ensure successful communication of our offerings. Understands our customer and the market trends in food and develops category plans to drive increased sales performance. Assesses the competitive food landscape to understand their strengths and weaknesses and identify opportunities and threats, including all traditional and non-traditional trade channels. Investigates and pursues new distribution and fulfillment opportunities to leverage freshness while balancing the cost of goods. POSITION REQUIREMENTS AND CONDITIONS:Education/Experience/Skills College degree preferred or minimum of 5 years equivalent experience in various Fresh or Prepared Foods related industries 5-10 years of retail or restaurant experience preferred Special consideration is given to applicants who have completed the WAFC Retail Management Certificate Program (RMCP). Knowledge Skills and Abilities Required: Skilled in the following areas using internal, market, or other data: Customer Experience Food costing Menu development Sales analysis, profitability and planning Demonstrated excellence in Strategic Planning as it relates to restaurant offering and menu, as well as setting annual and seasonal plans Excellent financial and data analysis capabilities Supply chain and sourcing knowledge Able to discuss and negotiate: Terms Lower cost of goods Menu pricing Excellent communication and team building skills Bi-lingual (English/Spanish) strongly preferred Salary: $95,316 -$121,528Physical Demands and Conditions The physical demands described below are representative of those that must be met by an employee to successfully perform the essential functions of this job.
