Essential Job Duties - Supervise and actively participate in daily kitchen operations to ensure all kitchen employees have the support and resources necessary to deliver high-quality food to guests. Ensure full compliance with federal, state, and local regulations, as well as all Company service and operating standards. Oversee the preparation and presentation of high-quality food across all restaurants and outlets. Assist in developing new menus and recipes, and continuously test existing recipes to ensure consistent quality. Analyze food sales to identify opportunities for menu optimization and make recommendations to the Executive Chef. Monitor kitchen activities to achieve maximum efficiency and maintain smooth operations. Enforce all hygiene, sanitation, and food-safety standards, with particular attention to proper food preparation and storage. Assist in training, developing, and scheduling kitchen staff to ensure appropriate staffing and skill proficiency. Serve as expediter when needed to support timely and accurate food delivery. Ensure all POS procedures are followed accurately and consistently. Design and facilitate training programs to ensure staff understand and meet Company service and operating standards as well as applicable regulations. Ensure consistent and fair application of all Casino Food Services Rules and Regulations. Evaluate staff performance and provide ongoing documentation of both positive and constructive feedback according to service and operating standards. Perform all other duties as assigned.
