This role supports the Executive Chef and Chef de Cuisine in overseeing evening kitchen operations while maintaining the highest standards of food quality, consistency, and execution.The PM Sous Chef will play a key role in leading service, mentoring cooks, and helping build systems and culture in a high-performance, live-fire kitchen.Key ResponsibilitiesLead and supervise PM kitchen operations during dinner serviceEnsure consistent execution of menu items to Aiona’s standardsManage and support line cooks during service, providing direction and feedbackCoordinate timing, pacing, and communication between stationsAssist with menu execution, recipe adherence, and plating standardsStep into any station as needed to support service flowMaintain a clean, organized, and efficient kitchen environmentAssist with prep, production, and service as neededCulinary Leadership & OperationsSupport training, coaching, and development of kitchen staffAssist with scheduling, labor management, and shift coverageHelp monitor food quality, portion control, and waste reductionEnsure compliance with food safety, sanitation, and workplace safety standardsParticipate in pre-service meetings, tastings, and post-service evaluationsCollaboration & CultureWork closely with FOH leadership to support smooth service executionUphold Aiona’s culinary vision, culture, and professional standardsLead by example with calm, focused, and respectful communicationContribute to a positive, disciplined, and team-oriented kitchen cultureQualifications3+ years of experience in a professional kitchen, including leadership or sous chef experienceStrong understanding of line cooking, service execution, and kitchen organizationExperience with live-fire, grill, or wood-fired cooking preferredAbility to lead under pressure in a fast-paced, service-driven environmentExcellent communication and leadership skillsAvailability for PM, evening, weekend, and holiday shiftsTemporary month to month-based parking pass The above requirements and benefits are not intended to be all-inclusive.
