Essential Job Functions: Manages, directs and supervises all personnel assigned to Food and Beverage operations. Schedules staffing to appropriate levels within all areas of Food and Beverage. Consistently reviews and maintains costs within projected levels. Creates, monitors and maintains a cash control system. Maintains discussions with the marketing department to determine when special events will be taking place in order to be appropriately staffed. Coordinates and executes catering and special event functions. Ensures that all team members within the food and beverage department are properly trained in the performance of their job duties. Mentors, motivates and supports the Food and Beverage team to ensure development of the team. Establishes and maintains effective and efficient department procedures and controls and ensures adherence to same by all team members. Prepares annual budgets, operating forecasts, and other required department reports. Ensures that all outlets within the Food and Beverage operation are scheduled for appropriate coverage during peak hours. Establishes and maintains contact with vendors and Food and Beverage customers. Supervises and works closely with Food and beverage managers, supervisors and team members. Inspect food and beverage outlets, kitchen operations and catering operations to ensure compliance with company and departmental policies and procedures. Review usage, guest counts and revenue reports to determine appropriate staffing. Perform all other duties as requested or assigned. Qualifications (Knowledge, Skills, and Abilities):4 Year Degree in Hospitality Management or related field. 4+ years experience as department leader in high volume Food and Beverage operations. 8 to 10 years Food and Beverage management experience. Experience in a Multi-Outlet facility or Casino. Point of Sales system experience. Exceptional interpersonal communications skills. Ability to forecast and maintain the departmental budget.
