About theposition: The Dietary Manager will assist the Culinary Director with managingall Dietary Department activities including tray line, tallies, menu encoding, serving,scheduling, ordering, staff assignments, In-services, resident service, andcleaning. This position will also oversee the dining experience for theAssisted Living residents. The DietaryManager works with the Culinary Director to ensures that the Kitchen and allrelated services and products meet high standards set for food quality, taste,cleanliness of food prep and service areas, safety, security and expensecontrol. Adheres to the Food Services budget and maintains a good workingrelationship with all vendors and Retirement Center team to enhance andcontinuously improve the dining experience for our residents. The bestcandidate for this position will have a background in the restaurant serviceindustry or dining in an Assisted Living community and knowledge of working ina kitchen environment with the desire to work in a skilled setting. A minimum of 2 years of assisting management or management of a Kitchen or restaurant or dining room environment Associate's degree in culinary is strongly preferred but will consider an equivalent with more related work experience Certifications to maintain: Serve Safe Manager, CPR, and First Aide A minimum of 1 year of successful related work experience as a supervisor and with hands-on responsibility in project planning, administration, budgeting, and scheduling required Professional and detail oriented in administrative and organization skills Excellent communication skills in both verbal and written forms Ability to prioritize, follow directions/procedures, make efficient decisions, proactively analyze and solve problems, be detailed and organized Self-starter, flexible/adaptable, proactive problem solver, and cooperative to accommodate job demands Ability to interact with staff, families and residents in person or over the phone in a professional, positive, flexible, proactive, resourceful, confidential and efficient manner in a fast-paced environment, sometimes under pressure Knowledge and experience with Microsoft Office suite (Word, Excel, Outlook, Internet Explorer). PCC experience is a plus. Will work with RD Dining Dependable scheduled timely attendance Duties: Works alongside the Culinary Director in maintaining the highest level of nutrition, presentation and taste according to specific diets in all meals served Assists in planning special meals for holidays Coordinates the daily kitchen work schedule with the Culinary Director Supervises staff in the department and coordinates with cooks next door as needed Supervises tray line to ensure residents are getting appropriate diets Supervises and reviews tallies and menu encoding Ensures residents are getting excellent customer service and provides feedback regarding dining to Culinary Director Supervises Assisted Living Dining. Trains staff to provide excellent service in the dining rooms. Regularly monitors and gets feedback from residents regarding the dining experience Tastes, smells, and observes food to ensure conformance with recipes, diets and presentation standards Willingness to work holidays, weekends and special events Monitors current inventories of all kitchen supplies and food items available. Places orders with Sysco or communicates needs of the kitchen with the Culinary Director Maintains a clean food service facility at all times in accordance with Serve Safe requirements, OCHCA and CDPH SupervisoryJob Responsibilities Carriesout supervisory responsibilities in accordance with the organization's policiesand applicable laws. Responsibilities include supporting Culinary Director in interviewing,hiring, and training kitchen staff, scheduling, appraising performance,addressing complaints and resolving problems. Salary: upto $28.00 per hour (depends on experience) with an excellent benefits packagethat includes: Medical, Dental, Vision, 401k (for full time positions) and theopportunity to continue your education through our scholarship program! Offer ofemployment is contingent upon successful fingerprint clearance throughDepartment of Justice, physical exam, TB and drug and alcohol screening.Covid-19 vaccination preferred not required.
