Responsibilities: Lead and manage all galley staff while overseeing the operations of all food outlets. Coordinate comprehensive food offerings, including group events and special dietary requests. Ensure meticulous preparation of meals for guests and crew with dietary restrictions and allergies. Monitor culinary standards, inventory management, and cost control processes. Conduct random audits of food preparation and menu offerings. Maintain a strong partnership with the shoreside Food & Beverage management team. Ensure compliance with all Disney Cruise Line and U.S. Public Health sanitation standards in all food areas. Set and follow departmental goals and objectives. Maintain and update operating guidelines and training materials as needed. Ensure facilities and equipment are functioning properly and are well-maintained. Oversee inventory control processes, including par levels and replenishment strategies. Implement garbage separation and disposal protocols. Manage handling, maintenance, and ordering of operational equipment. Ensure proper use and storage of hazardous materials in the workplace. Facilitate department meetings to ensure alignment and communication. Provide leadership to all direct reports, including: Managing personnel files and reviewing renewal contracts. Conducting performance reviews and implementing disciplinary actions when necessary. Ensuring compliance with Project Onboard requirements. Monitoring and improving STAR metrics. Leading onboarding training and ongoing professional development. Planning for succession within the department. Recognizing crew achievements and facilitating team communication. Participating in all Castaway Cay job responsibilities as directed by DCL leadership. Executing additional responsibilities as required by DCL leadership based on operational needs. Complying with all corporate policies and maritime safety regulations. Participating in emergency duties as outlined in the ship Assembly Plan. Basic Qualifications: Minimum five years of experience in high-volume food and beverage operations. Certified Executive Chef or an equivalent degree in Culinary Arts. Strong knowledge of food and beverage products, services, and equipment. Ability to calculate cost projections and understand their impact on budgets. Technical expertise in ship-based food and beverage operations. Excellent verbal and written communication skills. Strong interpersonal skills. Proficient in Microsoft Office and Outlook. Must be at least 21 years old. Fluent in spoken and written English. Willingness to live and work onboard one of our vessels for a specified duration. Ability to work a seven-day, 70-84 hour week with limited time off. Adhere to Disney Cruise Line appearance guidelines. Willing to share a cabin with other crew members. Enjoy working in a high-volume, fast-paced, guest-service-oriented environment. Flexibility with work schedule, job duties, and locations. Embrace diversity among guests and crew. Preferred Qualifications: College education or comparable industry experience. Experience in a shipboard environment. Additional Information: This is a SHIPBOARD position. Applicants must: Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel. Be committed to their position for at least 2-3 contracts prior to considering a transfer or promotion. Be ready to perform safety roles and emergency duties as specified in the ship Assembly Plan. Uphold general safety management responsibilities in areas under their control. Follow and comply with U.S. Public Health and Company environmental requirements. Value working and living in a diverse, multi-cultural environment. Comfortably live in confined spaces with strict regulations. Maintain a structured lifestyle both personally and professionally. Your Responsibilities: Possess a valid passport and C1/D Seaman's visa (DCL will assist with documentation). Complete a pre-employment medical assessment. Obtain a criminal background check.
