Ember Management Group is on the lookout for an exceptional and innovative Lead Pastry Chef to spearhead our pastry program for Buccan and Imoto in Coral Gables. This hands-on, leadership role is perfect for a pastry enthusiast passionate about craft, creativity, and consistency. The Lead Pastry Chef will take charge of the complete development and execution of all house-made desserts across our Miami locations. With an emphasis on in-house production, the pastry items will include selections offered across multiple concepts as well as customized creations for each outlet. This position grants you the artistic freedom to build a vibrant, seasonally-driven pastry program that complements and elevates the culinary identity of each restaurant. Grato - A cozy neighborhood Italian restaurant offering house-made pasta, wood-fired pizzas, and elevated versions of classic Italian dishes. Responsibilities Oversee the pastry program for Buccan and Imoto, crafting high-quality, from-scratch items across all brands. Create and implement seasonally inspired dessert menus unique to each concept while ensuring consistency for shared offerings. Manage the in-house production program, upholding standards for product quality, creativity, and consistency. Lead, mentor, and guide the pastry team, fostering a culture of organization and excellence. Collaborate with Executive Chefs and concept leaders to align pastry offerings with the culinary vision of each brand. Maintain rigorous standards for cleanliness, food safety, and efficient production processes. Assist with additional back-of-house and special event functions as needed. Document recipes meticulously and maintain a comprehensive pastry recipe portfolio. Qualifications 3-5 years of experience as a Pastry Chef or Pastry Sous Chef in a high-volume, quality-centric kitchen. Strong expertise in plated desserts and modern pastry techniques. A demonstrated flair for creativity, meticulous attention to detail, and a passion for seasonal, ingredient-driven cuisine. Proven experience in leading, inspiring, and managing a pastry team within a collaborative environment. Ability to manage production across multiple concepts with diverse menu styles.
