Job Description

Summary: The Kitchen Pastry Sous Chef will oversee all bakery and its functions for the banquet operation, restaurant outlets, and the Concierge to include VIP amenities. They will maintain the highest quality standards and specifications for the Rosen Shingle Creek Resort's image and the Executive Chef's standards. Responsibilities: Train and teach all bakery personnel on specifications of all banquet bread items as well as restaurant bread daily. Create seasonal bread and pastry items. Create a new process for producing and executing the bread program for banquets and outlets. Maintain all safety and sanitation qualifications at all times. Maintain a consistent and profitable food cost at all times. Maintain accurate inventories. Use proper food handling procedures and par levels at all times. Monitor daily payroll and maintain proper labor costs. Abide with company policy and adhere to the No Overtime Policy. Report to the Executive Pastry Chef daily. Review special requests or VIP amenities daily. Assure consistency with the production of pastry food items in banquets, all restaurants, and outlets. Responsible for ordering, checking, and pricing of all bakery-related products. Responsible for unlocking and turning on all bakery equipment and making notes of all equipment in need of repairs. Advising staff on volume numbers, checking for callouts, reviewing the previous night's production list, and reading log books. Communicating with the Warehouse to keep par levels of all pastry items needed daily for banquets, restaurants, and amenities. Organize all bakery coolers and freezers. Utilize leftover food items to avoid waste. Maintain sanitized floors. Handle scheduling and request for days off for all bakery staff. Adhere to the company's drug-free and tobacco/nicotine-free policy, ensuring compliance at all times. All other duties as assigned. Experience/Qualifications: Minimum 3 years of hands-on pastry or baking experience in a professional kitchen required. Strong foundation in classic pastry techniques required. Ability to lift 25 lbs. frequently and up to 50 lbs. infrequently. Ability to legally work in the USA. Education and Certification(s)/License(s): High school diploma or equivalent preferred.
