About the Role & Team Join us at Disney Cruise Line and experience the magic of Disney in a unique culinary environment. As the Lead Pastry Chef, you will guide and inspire a talented pastry team, bringing creativity and innovation to our dining offerings. You will report to the Executive Chef. Responsibilities: How You Will Make a Difference Lead, train, and develop your team through hands-on mentorship to achieve exceptional product quality and service standards. Promote outstanding products and innovative production while managing costs, inventory, and revenue effectively. Oversee all pastry and bakery offerings, including special requests, to ensure guest satisfaction. Invent new flavors and culinary experiences that excite our guests. Develop strategies to surpass guest expectations and enhance the overall dining experience. Establish and uphold premier culinary standards for all pastry and bakery items. Ensure quality control for all pastry and bakery items served. Maintain compliance with Disney Cruise Line and USPH sanitation standards in your area of responsibility. Conduct regular food and menu audits. Supervise the handling, maintenance, and reordering of necessary equipment. Basic Qualifications: What You Will Bring to the Team A minimum of four years of leadership experience in a fine dining patisserie, equivalent to a 1-star Michelin standard or higher. Strong training and expertise in Western/European fine dining. A comprehensive understanding of food and beverage products, services, and equipment. Excellent written and verbal communication skills. Proficient in budget analysis, cost projections, and their implications. Capability to craft high-quality menus inspired by themes and seasonal ingredients. Expertise in creating, costing, and training the team on high-standard recipes. Preferred Qualifications: How You Will Stand Out Possession of Executive Pastry Chef (CEPC) certification. Prior experience working on a ship. Additional Information: This is a SHIPBOARD role. You must: Have a genuine interest in a maritime career and be willing to live and work onboard a Disney Cruise Line vessel. Be prepared to perform safety roles as indicated in the ship's Assembly Plan. Uphold safety management responsibilities in the operations you oversee. Be prepared to share a cabin with other crew members and thrive in a diverse environment with strict regulations. Your Responsibilities: Hold a valid passport and C1/D Seaman's visa (DCL will assist in document processing). Complete a medical examination prior to employment. Undergo a criminal background check. Bring approved work shoes. Disney Cruise Line is a drug-free workplace. All new hires will undergo drug/alcohol testing within their first week onboard and throughout their contracts.
