Ensure consistency in recipe formats and presentations across all food outlets. Organize food tastings and trial runs for new menu items. Conduct weekly meetings with Galley leadership to discuss updates and operational matters. Manage ordering and stock control in the seafood and meat production areas. Collaborate with the Hotel Stores Manager on inventory management. Ensure adherence to requisition and stock control protocols, holding Galley leaders accountable. Monitor and uphold culinary standards throughout the operation. Ensure compliance with Disney Cruise Line and USPH sanitation requirements within your area of responsibility. Achieve food cost budgets and targets as established by the onboard Food Manager. Implement cost control measures effectively. Ensure proper maintenance and functionality of facilities and equipment. Implement waste management and disposal procedures. Adhere to and enforce Location Operating Guidelines. Address and resolve guest complaints promptly. Supervise the handling, maintenance, and reordering of operational equipment. Coordinate all food offerings, including group and special requests. Facilitate department meetings regularly. Carry out additional responsibilities as assigned by DCL leadership based on operational needs. Comply with all company policies and maritime regulations. Participate in emergency duties as outlined in the ship Assembly Plan. Basic Qualifications: A minimum of four years of experience in a high-volume Culinary/F&B operation. Certification as a Chef or a relevant degree in Culinary Arts. A strong understanding of ship-based food operations. Thorough knowledge of food and beverage products, services, and equipment. Ability to project and manage costs effectively, with an understanding of budgetary impacts. Familiarity with local and international beverage laws. Must be 21 years of age or older. Proficient in speaking, reading, and writing in English. Willingness to live and work onboard a vessel for extended periods. Able to work a demanding schedule of 70-84 hours per week with limited time off. Must adhere to Disney Cruise Line appearance standards. Willing to share accommodations with fellow crew members. Thrives in a high-volume, fast-paced, guest-service-oriented environment. Flexible with work schedules and job duties. Values diversity among colleagues and guests. Preferred Qualifications: Experience working on ships. College education or equivalent industry experience. Additional Information: This is a SHIPBOARD position. Applicants must: Demonstrate a genuine interest in a career at sea, willing to live and work onboard a Disney Cruise Line vessel. Commit to the position for at least 2-3 contracts before seeking a transfer or promotion. Be prepared for safety roles and emergency duties as required by the ship Assembly Plan. Understand and follow the safety management responsibilities outlined in the Safety Management System. Comply with United States Public Health (USPH) regulations and company practices. Appreciate and thrive in a multicultural work environment. Be comfortable living in a confined space with specific rules and regulations. Adapt to a structured lifestyle, both personally and professionally. Your Responsibilities: Possess a valid passport and C1/D Seaman's visa (DCL will provide documents for obtaining this). Complete a pre-employment medical assessment. Clear a criminal background check. Bring approved work shoes. Disney Cruise Line maintains a drug-free workplace.
