As the Executive Chef, you will be at the helm of all culinary operations for Remy and Enchante, orchestrating an extraordinary dining experience from menu development to kitchen management. You will report to the Hotel Director. Responsibilities: How You Will Make a Difference Articulate a culinary vision that inspires Remy and Enchante staff to deliver an award-winning dining experience. Mentor and empower your team to meet top-tier culinary standards through active leadership. Encourage creativity and innovation while managing costs and maximizing revenue. Oversee all food offerings, including group events and special requests. Craft unique taste experiences that captivate guests through imaginative food pairings. Ensure the highest culinary standards and consistent execution at the Remy restaurant. Achieve food cost budgets and targets in line with the Food Manager’s guidelines. Conduct daily tastings to maintain world-class quality and presentation. Take charge of final quality control for all food items served. Uphold USPH and HACCP standards within the Remy kitchen. Manage kitchen facilities and equipment maintenance effectively. Facilitate proper inventory control and turnover levels. Ensure the team is trained in dietary requirements and allergies according to company protocols. Engage with guests on the dining room floor to enhance their dining experience. Basic Qualifications: What You Will Bring to the Team Minimum of five years of leadership experience in a fine dining environment, preferably with a Michelin star recognition. Comprehensive knowledge of fine dining food and beverage products, services, and equipment. Strong foundation in Western/European fine dining culinary techniques. Exceptional written and verbal communication skills. Proficiency in budgeting, cost assessment, and financial planning. Ability to design, write, and implement high-quality menus considering seasonal availability. Skill in recipe development and the training of the team to execute at the highest standards. Preferred Qualifications: How You Will Stand Out Culinary degree or significant relevant experience preferred. Certification as a working Chef or equivalent in Culinary Arts is an advantage. Recognition in national or international media is a plus. Additional Information: This is a SHIPBOARD role. You must: Be genuinely enthusiastic about a career at sea and willing to live and work onboard a Disney Cruise Line vessel. Agree to follow safety protocols and emergency responsibilities as outlined in ship guidelines. Comply with general safety management responsibilities as specified in the Safety Management System. Be open to shared cabin accommodations and embrace a multicultural living environment with strict regulations. Your Responsibilities: Possess a valid passport and C1/D Seaman's visa (Disney Cruise Line will provide documentation for this). Complete a pre-employment medical examination. Undergo a criminal background check. Bring approved professional kitchen shoes. Disney Cruise Line is a drug-free workplace.
