As one of the largest not-for-profit employers in Pierce County, we strive to enrich the lives of our residents through selfless service.If you are passionate about making a difference in the lives of seniors, theneliseomay be the perfect fit for you.Shift:Availability (Weekends required)Position Summary:The Dining Services Cook is responsible for the overall food preparation and cooked meals for the residents and staff both personally and in coordination with the Assistant Cook by performing the following duties.Qualifications: 1+ years cook experience (Required). Previous Healthcare/Senior Living experience a plus. Essential Duties and Responsibilities:Cooks and presents food as ordered by residents and staff according to CMS and HACCP guidelines. Manages time to ensure all areas of responsibility are completed prior to the next meal to ensure meals are consistently served on the assigned schedule in any given area. For example, all food is prepared in the proper amounts, including for the altered diets and textures, etc. Organize production tasks and hold food in a way that best preserves its quality. Facilitates an expedient, efficient and accurate meal service by preparing areas of responsibility prior to the meal. Evaluates each tray/ plate for accuracy, proper presentation/garnishing as applicable and cleanliness. Pay careful attention to their part in ensuring appropriate food/beverage temperatures are maintained. Follow weekly menus, diet extensions, and tray cards to ensure each resident's dietary needs and preferences are accurately met. Directs activities of one or more Dining Services employees who assist in the preparation of meals to ensure CMS regulations and company policies are consistently upheld. Communicate with Executive Chef or Culinary Director if there are concerns with any employees in the execution of the above. Communicates dietary changes with Sous and Executive Chefs. Reads and accurately follow recipes and understands standardized therapeutic diets. Notify Executive Chef if there are concerns or questions about the recipes. Avoid waste through proper portioning and utilization of standardized recipes. Completes Waste Tracking Log each meal period. Notifies the Executive Chef if there are concerns with production amounts. Needs to be aware of the days special as well as upcoming specials and plan accordingly such as thawing and marinating of proteins or prepping dish components such as starches, vegetables and/or sauces. Responsible for all kitchen area cleanliness and organization including but not limited to walk-in refrigerator/freezer, dry storage, dish area, prep area, cage and undercounter storage. Follows established safe food handling and department HACCP standards. Prepares and dishes up food in pre-determined quantities according to the menu and number of people being served. Expedite meal service evaluating each tray/ plate for accuracy, proper presentation, garnishing as applicable and cleanliness. Prepares nourishments for the Nourish Plus Program according to the menu schedule. Checks and records temperatures and/or PPM of sanitizer solution as designated. Keeps equipment, work areas, and food carts in safe and sanitary condition. Reports any equipment or safety concerns to the supervisor. Participates in the successful execution of events when scheduled. Perform supervision duties when Sous Chef and Executive Chef are not available. Maintains organization, cleanliness and sanitization of their work area. This may include duties such as taking out trash, sweeping, mopping and other duties as assigned.
