A Pasta Bar is a modern Italian restaurant rooted in quality, technique and atmosphere. For over 8 years, we have been established in New York City, in the heart of SoHo, building a strong identity based on consistency, discipline, and high standards. We are now expanding to Miami and are building a disciplined, professional kitchen team with strong standards and high execution. We are looking for a skilled Grill Chef de Partie with a strong passion and real experience in fire-based cooking, grill work, steaks, and meat preparation, to join our dynamic hot line team in a fast-paced, high-performance environment. Position Summary The Grill Chef de Partie will be fully responsible for working the grill and live fire section of the kitchen, executing high-level cooking techniques centered around meat, steaks, barbecue-style preparations, and grilled fish. This is a fire-driven role where precision, timing, and full control of heat are essential. The ideal candidate thrives in a high-energy open kitchen, working directly with fire, charcoal, grills, and high-temperature cooking methods. A strong passion for modern grilling techniques, BBQ influence, and steakhouse-style execution is essential. This role also offers the opportunity to contribute to the creative process, working closely with Senior Sous Chefs in the development of new dishes focused on grilled meats, seafood, and fire-based cooking concepts. There is also potential exposure and growth into bakery and bread-making within the kitchen. This position offers strong opportunities for growth within the company, with clear potential to develop into senior kitchen roles. The right candidate will have the chance to grow professionally, take on greater responsibilities, and evolve within a young and expanding restaurant group. Essential Duties & Responsibilities Run the grill and fire station with full responsibility and precisionExecute steaks, meat cuts, barbecue-style items, and grilled fish to the highest standardsMaster control of fire, heat zones, and timing in a fast-paced service environmentMaintain mise en place and station organization at all timesEnsure strict FIFO, proper storage, labeling, and waste controlMaintain sanitation standards in compliance with Florida Department of Health regulationsWork efficiently under pressure during high-volume serviceCollaborate with all stations to ensure smooth and consistent service flowSupport Senior Sous Chefs in the creation and development of new fire-based dishesMaintain full ownership of the station with consistency, discipline, and precision Qualifications Minimum 2 years of experience in a high-volume or fine-casual restaurantStrong experience in grilling, steak cooking, and fire-based techniquesConfident working with live fire, high heat, and open kitchen environmentsStrong understanding of kitchen operations and line executionAbility to stay clean, organized, and consistent under pressureKnowledge of portion control, food cost, and waste managementStrong teamwork and communication skillsPassion for learning modern grill techniques, meat craftsmanship, and fire cooking stylesAmbition to grow within a young, dynamic, and highly motivated teamValid Food Handler Certificate required  A Pasta Bar is an Equal Opportunity Employer and does not discriminate on the basis of race, color, religion, sex, pregnancy, national origin, age, disability, marital status, genetic information, sexual orientation, gender identity. mation, sexual orientation, gender identity.
