Job Description This Sous Chef role is responsible for the culinary execution and elevated plating of premium food offerings within the Alaska Airlines Lounge. In addition to crafting premium dining experiences, responsibilities include managing detailed production logs and overseeing seamless operations to ensure the highest standards of hospitality. _This position will support daily food service operations at the Alaska Airlines Lounge located inside the Anchorage International Airport in Anchorage, AK._ Responsibilities + Perform all main line food production duties. + Responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting + May be responsible for menu and recipe development. + Responsible for quantity and quality control in food production as well as overall sanitation of assigned areas. + Assist in the supervision and training of food service personnel. + Arrange for food service workers to complete smaller item preparation. + Oversee food serving lines ensuring food items are properly stocked. + Ensure food safety sanitation and workplace safety standard compliance. + Implement working knowledge of automated food inventory, ordering, production and management systems. + Develop and motivate team members to embrace culinary innovations. + Support an active safety program. + Follow uniform standards according to department policies. + Assist other food service personnel at any given time. + This position is responsible for the supervision of staff. + Other duties that are pertinent to the department or unitu2019s success also may be assigned. Qualifications + High School diploma or GED equivalent. + Alaska Food Handlers Card or ServSafe certification contingent upon 30 days of hire. + At least one (1) year of Kitchen Management or Sous Chef experience in a food service operation, restaurant, hotel or other recognized establishment. + At least one (1) year of management experience with direct oversight of food service staff. + Experience in safety and sanitation, health department inspections, etc. + Excellent leadership and communication skills with the ability to maintain the highest culinary standards + Proficient in using the following equipment: steam tables, dish machine, trash carts, knives, ovens, slicers, mixers, grill, grinder, fryer, broiler, flat tops, counter mixer and roasting ovens and kettle. + Contract requires employees to speak, understand, read and write English. + Ability to pass SIDA Badge test, which includes an assessment of knowledge related to airport security protocols, access control procedures, and safety regulations in secure and restricted areas. + Ability to obtain an Alaska AOA Badge. To be eligible, applicants must meet the following criteria: + Successfully pass an FBI fingerprint-based background check. + Complete and pass a TSA Security Threat Assessment (STA). + Have no outstanding warrants or be able to provide documentation of their resolution. Preferred Qualifications + Three (3) years of direct food preparation experience. + A valid Driveru2019s License and an acceptable driving record for the past three (3) years to be eligible under NMSu2019 vehicle insurance policy. Working Conditions and Physical Requirements Weather:Environmentally controlled; requires most or all work to be done indoors, occasionally exposed to the outdoor weather. Noise level: Moderate to Loud. Pace of work environment: Medium Customer Interaction: High Description of environment: Alaska Airlines Lounge kitchen setting. Physical requirements: Employee is required to lift and/or move up to 35 lbs. and/or 50 lbs. Frequently to constantly required to sit, stand, walk, use hands/fingers to handle or feel, climb, stoop, kneel, crawl, talk/hear, see, taste/smell, and carry weight/lift.
